Rice with fried egg, plantain and tomato sauce

Here you have a delicious and easy recipe cooked to the Spanish style. As it is very tasty, it can really save a lot of trouble.


Ingredients for 2 people

  • 200gr rice
  • 1 onion
  • 1 plantain
  • 4 eggs
  • 1 can tomato sauce
  • Thyme
  • Oregano
  • Olive oil
  • Soy sauce

Method

Boil some water in a pot and add the rice during 15 minutes.Meanwhile cut the onion into pieces and heat the olive oil in a pan until golden brown. It usually takes a couple of minutes, After 3 minutes or so, add the thyme and the oregano. Let it fry for a couple of more minutes and add the tomato sauce. If you have a can of fried tomato sauce, it’ll only need to be on the fire for a minute. If it isn’t fried, it’ll need about 5 minutes. Add a little bit of wine. When the tomato sauce is fried, add the soy sauce and move it away.

When the rice is boiled, you could give it the shape like in the picture with asmall bowl and add the tomato sauce on top of it. Fry the eggs in a pan. Add two or three drops of olive oil and wait until it
steams. When you put the eggs into the pan, put the lid on and cook it for about 2 minutes a low heat, so that they don’t get burnt. The yolks will get cooked because the lid is on. If you like it more cooked, then leave it for a longer time. Finally fry the plantains with little olive oil on both sides and place then on top of the eggs. And ready to eat!
